Took me 8 hours over 3 weekends to figure out my offset smoker would not hold temp because of ONE small gap
Bought a used offset smoker off a guy in Plano back in March. First two cooks were a disaster. Could not get it past 210 no matter how big I built the fire. I checked the firebox, the vents, the wood, all of it. Turns out there was a pinhole gap where the firebox bolts to the cook chamber. A $6 tube of high temp silicone and 10 minutes fixed what 8 hours of guessing could not. I felt like a total rookie. Has anyone else chased temps for weeks and found the fix was something stupid small?
Man, I feel this in my soul! I read a thread on a BBQ forum a while back where a guy swore his smoker had a leak and everyone told him he was crazy, turns out his temp gauge itself was off by like 40 degrees the whole time. That kind of stuff will make you question your whole setup. I spent a whole weekend once messing with my vents and wood splits before my buddy pointed out my lid was warped just enough to let heat pour out the side. A cheap gasket kit and some silicone later and it ran like a totally different cooker. Funny how the fix is always some tiny thing you'd never even think to check first.
