Vent: I dropped $80 on a fancy digital probe thermometer that crapped out halfway through my first overnight brisket cook.

The display just went blank at 3 AM, and I had to guess the temp for the next five hours, so has anyone found a truly reliable brand that can handle a full 12-hour smoke?

Maybe your brisket just needed a break from the constant surveillance.

That's a rough way to learn a lesson about gear. leewalker has a point about the break, but guessing temps for hours is a recipe for stress. My ThermoWorks Smoke has survived years of all-night cooks without a hiccup, the receiver unit just stays by my bed.

My first thermometer died during a pork shoulder and I felt like a detective trying to solve a mystery with no clues. That midnight panic is the worst. I ended up going with the same one mary_nelson71 mentioned, and it hasn't let me down yet. It's kind of funny how we spend all this money just to get a good night's sleep, isn't it? I guess the real lesson is that a reliable tool is worth way more than its price tag when your dinner depends on it.
