Went to Lockhart and the brisket at that one famous joint was dry as a bone
Made the drive down to Lockhart last Saturday, hit up the place everyone raves about. Waited 45 minutes in line. Paid $34 for two plates. The brisket had zero moisture, sliced like cardboard. The sausage was fine but nothing special. Ive had better from a gas station pit in Waco. How does a place with that reputation let a $1000 brisket go out like that? Did I just catch them on a bad day or has anyone else noticed the tourist spots slipping while the smaller joints stay consistent?

Man, I used to roll my eyes at people who said the famous spots were overrated, figured they just wanted to feel special about knowing a hidden gem. Then I stood in that same line and got the same dry slice, and now I get it. Guess reputation and good meat don't always ride together.
