Unpopular opinion: I picked evaporated milk over condensed milk for my pantry and never looked back
I know everyone loads up on sweetened condensed milk for quick desserts, but I tried evaporated milk in my chili last Tuesday and it worked way better. It added that creamy richness without making everything taste like candy. I used a 12-ounce can of Carnation and it thickened the broth perfectly. Has anyone else found a savory use for evaporated milk that beats the sweet stuff?

bro same here lmao. i tried evaporated milk in my chili last week too and it was honestly life changing. i used the same carnation 12 oz can and it thickened everything up without turning it into dessert soup. my wife was like "why does this chili taste like a milkshake?" but i swear it didn't lol. i also started putting it in my mac and cheese instead of regular milk and it makes it so creamy without being sweet. guess i'm just a savory evaporated milk convert now, sorry not sorry.

You ever notice how we're all taught that one specific ingredient is the only way to go for something, but then you find out the other option works just as well? That's like how everyone swears by brown sugar for baking, but I've had soft cookies with white sugar that were just as good. I think it's just a reminder that a lot of our kitchen rules are really just habits we never question.
