Am I the only one who gave up on dried herbs for good?

I went all fresh... but once I had to use fennel instead of dill in a pickle brine. Customers loved it so much they think it's my signature move.

In my pantry right now, there's a jar of dried oregano from two years ago. It still works fine for pizza sauce... not everything needs to be fresh. Dried herbs have their place, like thyme in a slow cooker stew. Fresh is nice for salads or garnish, but for most cooking, dried gets the job done. Giving up on them completely seems like making a big deal out of nothing... even a swap like fennel for dill worked out fine.

My friend Dave found a jar of dried rosemary in his cupboard from his old apartment. He tossed it into some roasted potatoes last week, and they came out with this deep, herby flavor. Kinda like what @caseyf32 said, dried stuff holds up better than people think. Dave said it saved him a trip to the store, and now he checks his pantry before buying fresh.

Lol no way, dried herbs are total pantry heroes. I bet @annajenkins' ancient basil would still slap in a long simmered pasta sauce. People get way too snobby about fresh only, but half my weeknight dinners are saved by that jar of dried oregano. Your fennel story proves the point, sometimes a swap or using what you've got makes the meal better anyway.
