Crossed 500 covers in a single service last Saturday and I'm still processing it
I've been running the line at a busy spot in Portland for about 8 years now, and we somehow pushed out 503 covers between 5pm and close. Never hit a number that high before, even during holiday rushes. It was total chaos on the grill station but we kept the ticket times under 12 minutes for most of it. Has anyone else had a milestone number like that sneak up on them and make them rethink their kitchen's capacity?

Honestly, that's insane. 500 covers in one service sounds like a fever dream. We had a similar thing happen once on a random Tuesday, nothing special, and suddenly we were in the weeds for like four hours straight. I'm still not sure how we didn't run out of plates or something. It really makes you look at your prep and your crew differently after a night like that.

Tuesday night surprises are the worst. Makes you wonder if someone put a sign on the door saying free food.
