I finally caved and started pre-portioning my mise after watching a line cook waste 20 minutes hunting for shallots during service
Overheard a new guy grumbling that he couldn't find the prep we did because the walk-in was a mess, and it clicked that my no-systems approach was making everyone's night harder instead of faster.

Got a buddy who runs a taco popup and he told me he spent half an hour looking for his spice blend one night because someone shoved it behind a bucket of pickled onions. After that he started taping a sharpie to the walk-in door so everyone could write dates on stuff.

Sharpie in the walk-in is a game changer lol. @west.casey reminds me of when I used to work at this little breakfast spot and someone kept throwing the bottle of chipotle honey back in the wrong spot. Chef finally wrote "CHIPOTLE HONEY YOU DINGUS" on the shelf with duct tape underneath. Took a solid week before everyone stopped putting it next to the maple syrup. It's always the one ingredient that ruins your whole flow too.
