My pour over timer hit 4:30 for the first time and the taste was awful

I've been brewing with a V60 for about a year, always aiming for that 3:30 finish everyone talks about. Yesterday, my grind was a bit too fine and the drawdown stalled, hitting 4 minutes and 30 seconds on the clock. The cup was bitter and hollow, nothing like the sweet, balanced coffee I was expecting. Has anyone else found that chasing a specific brew time can actually lead you astray?

You're right about chasing the clock. I was stuck on that 3:30 target too until a similar bitter cup made me focus on taste instead.

Honestly, it's just coffee. Some people like the routine of timing it, and others just go by flavor. Neither way is wrong, it's just a drink. Getting super deep about extraction times feels like overthinking a simple pleasure.
