Update: That DIY hidden microphone I built from an old webcam actually picks up conversations 20 feet away, I was ready to toss it after week one

The hack was to rip out the camera sensor and replace it with a cheap electret mic capsule from Amazon, then solder the audio line to an unused pin on the board, and now my neighbor's early morning arguments come through crystal clear on my computer, anyone else had luck modding old webcams into listening devices?

That 20 feet claim sounds like you're measuring through drywall, not open air. Most cheap electret capsules start dropping off hard past 10 feet unless you've got some serious preamp gain. Still, if you're actually picking up your neighbor's blowouts that clearly, maybe grab some noise canceling headphones instead of fine-tuning your spy gear.
