Just learned that Grade B syrup isn't actually a real grade anymore

I was at the farmers market last Saturday and the guy running the maple stand told me that Grade B got renamed to Grade A Dark back in 2014 or something. I always thought Grade B was the cheap stuff but apparently it's just darker and more maple-y. Has anyone else noticed stores still calling it Grade B though?

Why would anyone care what they call it if the taste is exactly the same?

Ngl, names carry way more weight than people give them credit for. Calling something by a different name changes how you experience it, even if the ingredients are the same. It's like rebranding a cheap store brand as artisanal and suddenly people think it's better. Labels set expectations, and expectations mess with your perception big time. So yeah, the taste being identical doesn't matter when the name primes you to enjoy it less or more from the jump.
