PSA: Don't buy that fancy $15 bottle of organic maple syrup from the farmer's market if you're just gonna pour it on pancakes.

Ngl, I dropped $18 on some small-batch Grade A Dark from a vendor in Burlington last summer. Tasted amazing straight, but soon as I heated it up on pancakes it turned into a watery mess. Total waste. Stick with the big jugs from the grocery store for cooking.

That $18 bottle just confirmed everything you said, I learned my lesson the hard way.

Heated it up too fast maybe? I use the good stuff all the time for pancakes and breakfast stuff, just gotta keep the heat low and let it warm slow. Never had it get watery on me, just sayin.

$18 for a tiny bottle of sap... I bet the guy selling it had a beard with twigs in it and everything. Sounds like you paid for the "experience" of pouring liquid gold that turned into maple-flavored regret. At that price it should self-warm and flip the pancakes for you. My $8 jug from Hannaford might be a little basic but at least it stays thick when I nuke it for thirty seconds like a civilized savage.
