Last Saturday I completely forgot my sourdough starter was rising

I had a banneton proofing on the counter and got distracted by a phone call from my sister in Portland. By the time I remembered, the dough had spread out like a pancake and was way past its peak. I baked it anyway but the crumb was dense and the ear barely lifted. Has anyone else had a batch go sideways from a simple distraction like that?

Also just a heads up, a banneton is the basket you proof the dough in, not the dough itself. You probably meant the dough was proofing in the banneton when you got distracted. That phone call cost you a good ear though, I've had the same thing happen when my mom called me during bulk fermentation.

@the_terry isn't that the worst feeling when you lose a good ear like that?

@the_terry I feel your pain. My last bad ear came from getting way too confident checking my dough. Pulled the banneton off and the whole thing just flopped sideways. Looked like a sad pancake with a crusty edge. Still ate it though, cold butter fixes everything.
