The moment I realized I was overmixing my pancake batter for 10 years

I was at my sister's house last Saturday making breakfast and she saw me stirring the batter like I was mixing concrete. She goes "you're making it tough, stop" and showed me her lumpy mess that turned out fluffy. Anyone else have a simple baking habit they did wrong forever?

Man, absolutely. I had this friend who was super into artisanal bread, like the whole sourdough starter thing. She'd talk about the crust and crumb, and I swear, once she pointed out the difference between a dense, gummed up bread and a light, airy one, I couldn't un-notice it. Now I'm that guy at every brunch checking the texture of the toast.

Right! Once you see it you can't go back. My roommate got me hooked on those fancy sourdoughs and now I'm literally sniffing the crust of every loaf at the bakery to check for that perfect caramelized smell. I actually got made fun of at a potluck last month 'cause I spent five minutes explaining why this one grocery store loaf was "dead" inside. But I stand by it, a good crumb structure makes or breaks a sandwich. Now I'm the weirdo who brings my own "artisanal" bread to picnics, no lie.
