Tried a snake method on my offset smoker and ate crow
I always told people snake method was just for those little bullet smokers, not real pits. Then my fire management went sideways during a 12 hour brisket cook last month. I was adding splits every 45 minutes and still fighting temp swings. Finally tried a modified snake with some pecan chunks around the edge and it held 250 for almost 3 hours without touching it. Anyone else stubborn about a technique then had to admit it works?

3 hours without touching it sounds like a dream honestly. I was the same way, thought snake was just for the little guys but after fighting with my offset for years I finally caved and tried it with some apple chunks last month. Had to eat my words for sure.

How'd you stack the pecan chunks in relation to the coals?

Always put the pecan right on top of the hot coals for me. Lets it catch and smoke real quick before I put the meat on.
