I finally figured out I was over salting my beans for years

and honestly that timing thing is huge. tbh i used to hard boil my beans with salt right from the start and they always came out tough on the outside but kinda mushy inside. switching to salting halfway through or at the very end changed everything. like now i just add a pinch of salt with the aromatics at the beginning, save the rest for the last 15 minutes, and they come out perfectly tender and actually taste seasoned through. ngl it takes a little experimenting to get the hang of it but once you do youll never go back.

Used to think adding salt early was the move but you just changed my mind with this. Gonna try salting at the end next time and see if it makes a difference.

and yeah salting too early just draws the moisture out before the beans have a chance to cook through properly.
