I used to skip the discounted produce section until last week

Remember making a killer potato leek soup with spuds that had eyes all over them. They were kinda soft, but once boiled, they mashed up perfectly. Same with wilted spinach, it just melts into the broth and adds a deep green color. I find that these veggies have a sweeter, more concentrated flavor after they start to go. It's like they're giving their all for one last meal. Honestly, calling them trash feels wrong when they make such good food.
