Made chili with canned beans versus dried beans side by side last Sunday and the texture difference was night and day.
I soaked the dried ones overnight and simmered them for like 2 hours, and they held their shape way better than the mushy canned ones, plus it cut my grocery bill by almost $4 for the batch, but was it worth the extra time or am I just being picky?

Yeah, I felt the same way when I tried dried beans in my chili last month. The texture difference was huge, the dried ones stayed firm and didn't turn into paste even after reheating. For me, it was worth the extra time just to avoid that mushy canned bean texture, but your mileage may vary depending on how patient you are.

Oh man, I actually have to totally disagree here! I did my own test a few weeks back and honestly preferred the canned beans in my chili. The dried ones were too firm for me, like they never really softened up all the way even after a long simmer. I like my chili thick and the canned beans break down just enough to make it hearty without being mushy. Plus I can just open a can and dump it in, no planning ahead or soaking overnight. I get why texture matters but for me the convenience wins out every time.

Seems like a lot of thought for a pot of chili, but to each their own. Either way it's still beans and meat, so I wouldn't lose sleep over it.
