I was at a pop-up in Portland last month and saw a cook use a spray bottle of water to fix a broken hollandaise. It worked.

How much water are we talking here? Like a single spritz into the whole bowl, or did they go full plant mister on it? I've only ever fixed a broken sauce with more butter, and that feels like cheating.

Yeah @jamie_adams, a plant mister is basically a war crime on pasta.

Oh the "full plant mister" approach is a disaster waiting to happen! You want a single, tiny spritz from a clean bottle, then whisk like crazy. It's all about adding the water drop by drop, not in a stream. I've saved many a hollandaise that way. Adding more butter works, but then your sauce gets way too rich. @finleyl39 is right, that kind of heavy water spray belongs on plants, not food.
