Serious question, ever have a night where everything just clicks?

Ngl, last Friday our whole crew was in sync and we pushed out 87 covers in two hours without a single re-fire. What's the smoothest service you've ever worked?

My buddy was working this insane wedding party once... like 300 people, open bar, the whole thing. His kitchen was just a well-oiled machine that night. They had these perfect silent hand-offs, the expo guy was calling tickets before they even printed, and the dish pit kept up with every single plate change. He said it felt like they were all reading each other's minds, just passing hot plates down the line without a word.

Okay but 87 covers in two hours is actually a crazy low number for a whole crew. That's like one table every 8 minutes for the whole team. Maybe it was a super fancy tasting menu or something, but for a normal dinner service that's really slow. A smooth night for us is doing double that without breaking a sweat.

Depends on the place and the menu.
